Masterpieces of Soviet cuisine: recipes of popular dishes of the time

1. Cake “Anthill”

flour – 400 g;
margarine – 250 g;
sugar – 0.5 st .;
salt – 0.5 tsp;
eggs – 2 pcs .;
soda – 0.5 tsp;
butter – 200 g;
boiled condensed milk – 1 bank.
Soft margarine, whisk together with sugar, to end up with a rich creamy mass. Whisk the eggs with soda and salt separately.
Gently combine the two prepared masses and, while continuing to mix, add a portion of the flour. The result should be a cool dough, which should be sent to the fridge for an hour.
After that, pass the dough through a meat grinder or grate. Put it in a baking tray covered with parchment. Bake in the oven for 20-25 minutes. at a temperature of 160 ° C.
For cream, beat the condensed milk with butter. Break the dough into small pieces and mix it thoroughly with the cream. It will be necessary only to form a hill in order to get an “anthill”. Cake put on 1.5 hours in the refrigerator.

2. Potatoes with stew
This dish will probably only be remembered, since the stew, which is now sold in stores, does not compare with the quality of the product produced in Soviet times, which means that you can only repeat the recipe with canned meat of its own production.

potatoes – 0.5 kg;
stew – 1 bank;
Cut the peeled potatoes into slices and send to boil.
When it comes to half-ready, put the stew in the pan.
Cook until soft, adding salt to taste.

3. Napoleon cake
The most popular cake, which continues to be sold in pastry shops, only its taste does not compare with the dessert, familiar to many of the USSR. Puff pastry cakes can be prepared according to any recipe and even bought in the store, since the whole thing is in cream.

yolks – 8 pcs .;
sugar – 400 g;
vanilla sugar – 1 bag;
flour – 100 g
Put the milk on the slow fire. At this time, rub the yolks with sugar.
Add vanilla sugar and flour to egg mass. After this, pour the milk in portions, stirring.
Put everything on the stove, stir until the cream thickens. Grease them with cakes and refrigerate for a few hours.

4. Cream Cheese Snack

processed cheese – 300 g;
butter – 50 g;
eggs – 3 pcs .;
garlic – 3 cloves;
mayonnaise – 4 tbsp. spoons;
salt and pepper.
An hour before cooking snacks, remove the curds and butter in the freezer to make it easier to grate them. Eggs boil, peel and mash with a fork or grind on a fine grater.
Combine grated cheese, butter, eggs, garlic, mayonnaise passed through a press, and add salt and pepper to taste. Mix thoroughly until smooth.

5. Salad “Olivier”
Previously, to present a festive table without this salad was simply impossible. The original pre-revolutionary recipe has changed and became available. Many still continue to cook it. By the way, foreigners call the salad “Russian”.

carrots – 2 pcs .;
sausage – 350 g;
eggs – 4 pcs .;
pickled cucumbers – 2 pcs .;
onions – 1 pc .;
green peas – 1 bank;
salt and mayonnaise.
